INGREDIENTS:
6 Bone-in Chicken Breasts with skin
30 ml Olive Oil
2.5 ml Cayenne Pepper
10 ml Ground Cumin
10 ml Garlic Flakes
20 ml Italian Herbs
Salt and Pepper to taste
Fresh Coriander to serve
DIRECTIONS:
Arrange chicken pieces in a lightly greased baking dish, allowing room between pieces. Combine oil with Cayenne Pepper,Cumin, Garlic Flakes, Italian Herbs, and salt and pepper to taste.Rub over the chicken even rubbing under the skin where possible.Cover dish with foil or a lid and bake for 40 minutes to 1 hour at 190°C, or until chicken is cooked through and juices run clear.Top with fresh coriander and serve with rice.
