Butterfly Lemon Chicken

INGREDIENTS

Whole Chicken

Cooking Oil

Cayenne pepper/ Dried chilies

Garlic

Dried Oregano

Paprika

Red wine vinegar

Barbecue spice

Greek yoghurt

Lemon juice

METHOD

1. Preheat the oven to 180 degrees Celsius

2. Combine the cayenne pepper/chilies, garlic, salt, paprika,lemon juice,yoghurt, oil, red wine vinegar and barbecue spice together in a bowl.

3. Cut down either side of the chickens backbone. Place the chicken Breast up and flatten it in a baking tray/dish, rub some of the sauce on the chicken, cover tray with foil and place in the oven.

4. After 1 hour and 30 minutes rub the rest of the sauce on the chicken and cook until well done.
