Baked Avocado Egg

INGREDIENTS

Avocados

Salt

Eggs

Paprika

Curry powder

Dried Oregano

Scallions

Red pepper

Onion

Cheese

METHOD

1. Preheat the oven to 190 degrees Celsius.

2. Cut the pepper and onions into cubes. Chop the scallions

3. Cut the avocado in half and remove the seed.

4. Remove some of the avocado with a spoon so an egg can fit in the hole.

5. Place the avocado in an oiled baking tray. Season the avocado with salt and crack an egg in the center of the avocado.

6. Sprinkle the egg and avocado with the salt,peppers,onion, curry powder,paprika, dried oregano and scallions.

7. Bake in the oven for 40 minutes, then add the cheese, then bake for another 5 minutes. ( This is if you like a well done egg).
