INGREDIENTS
2 Butternuts halved
1 cup boiling water
Chopped Spinach
Cinnamon
Grated mozzarella Cheese
Garlic
Sliced onion
Stock of your liking
Portuguese chicken spice
INSTRUCTIONS
1. Preheat the oven to 180°C. Place the butternuts on a lightly greased roasting pan and season with salt, pepper and cinnamon.
2. Pour the boiling water into the pan and cover with foil.
3. Place in the oven and cook for 35 minutes.
4. Once cooked scoop out some on the butternut flesh.
INSTRUCTIONS FOR CREAMED SPINACH
1. Sauté the garlic and onion in a pan with oil.
2. Add the spinach, chicken spice and stock and stir. Pour in cream and cook for a few minutes until wilted.
3. Add the grated cheese and mix until well combined.
4. Spoon the creamy spinach into each butternut half and top with extra cheese.
5. Bake in the oven for 20 minutes until cheese is golden.
