Strawberry Muffins

INGREDIENTS:

3 cups of plain flour
1/2 cup of sugar
1 tablespoon baking powder
1/2 cup brown sugar
125g butter,melted
3 eggs
1 cup milk
1 1/2 cups strawberries chopped
Icing sugar to sprinkle

DIRECTIONS:

Preheat oven to 200 Degrees.Brush oil into bottoms only of twelve muffin tins.Sift flour,sugar and baking powder into a bowl.Stir in brown sugar.Combine melted butter,eggs and milk,stir into the dry ingredients until just blended.Fold in strawberries very carefully and lightly.Spoon into greased muffin tins until two-thirds full.Bale for 20 minutes until browny.Sprinkle with icing sugar while hot.
