Almond Cake

INGREDIENTS:

1 1/4 cups of softened butter
1 cup of sugar
5 eggs
3 cups of flour
1 tsp of cinnamon
2 tsp of baking powder
2 tbsp of vanilla essence
1 cup of milk
1/2 a cup of almonds
1 lemon (zest)
Pinch of salt
Icing sugar

DIRECTIONS:

Preheat oven to 160°C .Butter a 9 inch baking pan.Place butter and lemon zest into a large bowl.Add sugar and mix together using a spatula.Add 1 egg and 3 tbsp of flour and cinnamon,beat together with an electric mixer.Add the remaining eggs and mix until completely incorporated.Place remaining flour with baking powder and salt in a small bowl,mix together.Sift the flour into the egg batter and mix very well with spatula.Pour in vanilla and mix with spatula.Add remaining flour and continue mixing.Pour in the milk and with the spatula mix well.Fold in the almonds.Pour the mixture into the baking pan and bake for 40 minutes or until toothpick inserted comes out clean.Remove from the oven and cool for 5-6 minutes.Unmold onto a wire rack and set aside until cold.Place icing sugar in a sieve and dust before serving.
