INGREDIENTS
For the Rice
- 1 cup of cooked rice any left over rice
- 1 tsp Turmeric
- 1 tspSpice for Rice
- 2 tsp Curry Powder
- 1 cup of red peppers and green peppers ( half a pepper will do), cut into cubes.
- 1 cup of Onion or Shallots
For the Chicken
- Chicken breasts
- 2 tbsp Paprika
- 1 tsp Garlic Salt
- 1 tsp Salt and Pepper
- 1 tsp of Curry
DIRECTIONS
- For the Rice, fry the peppers, onions and spices in a pan until cooked.
- Add the rice and continuously mix until the rice has turned yellow.
- For the chicken, season it with the paprika, garlic salt, salt and pepper and curry. Put in the fridge for about 20 minutes.
- In a pan, put oil and fry the chicken until it has brown on both sides. Take the breast out and cut diagonally into slices and put back into the hot pan, let chicken cook through until it is crispy.
- Serve the cooked rice and chicken in a platter and sprinkle with fresh parsley. Enjoy!
